Rice and beans with avocado & roasted beet and squash soup |
To tide you over, here's a sampling of what I've made over the past week or so.
- Chicken baked with bread and chard -- the recipe calls for bone-in thighs, but I'd recommend boneless, cooked for the same amount of time (I had to take the bone-in thighs out and finish them under the broiler, even after cooking them quite a bit longer than suggested)
- Rice and black beans with avocado -- this has become a regular in my rotation, as it is very quick and easy to prepare
- Roasted beet and butternut squash soup -- the color is spectacular and it's yummy as well
