- Baked oatmeal (made in a crock pot -- consistency of a good, chewy brownie. And if you're into crock-potting, this site is full of great recipes)
- Whole wheat pear poppy loaf (not as pear-licious as I'd hoped, but still a nice change from banana bread)
- Chicken and blue cheese salad (a quick meal salad -- perfect for using up leftover chicken)
- Falafel patty melt (I use folded naan instead of pitas)
- Hacked caprese salad (I have made a gajillion different versions of this, varying the add-ins, and all are excellent. This time I used the leftovers to make a big calzone, using my 5-minute-a-day bread dough)

What we ate last week
Here's a few more for you to check out while I'm busy cleaning up after an exploded boiler and a leaky ceiling:
I made the hacked caprese salad yesterday--holy cow that's good, and very easy. I mixed it in with pasta and it made a really great lunch. I'm going to make this a lot, I can tell. Although now I'm wishing I had tossed some salami in for my lunch today. Oh well, maybe I'll remember that tomorrow.
